Here is our featured resource, a recipe posted by Emily Rodier, a first-year UCTC teacher:

This recipe is named after Emily's savvy recipe-creating grandma, Arlene. I am not sure if she invented the concept of Rice Krispie Breaded Chicken, but I like to think she did I think this little recipe is quite easy and delicious! Enjoy!

Chicken Arlene

Ingredients:
Chicken breasts, fresh or thawed
Butter or margarine
2 cups of Rice Krispies
You will also need...
Cookie Sheet or flat plan
Tin foil

Pre-heat oven to 375 degrees. Line cookie sheet or pan with tin foil. Cut chicken breasts in half so they are easier to bread. Melt butter/margarine in microwave. Crunch up Rice Krispies. Dip and turn chicken in the butter, then dip in Rice Krispies. Place on foil lined pan. Bake in oven at 375 for 30-45 minutes or until finished.
